"I don’t think people expect Panceta in a Spanish food shop, and consequently we don’t sell as much as we should of this wonderful smoked semi-cured pork belly. I always keep some in my freezer to use in pasta with rocket and Zamorano (ewe’s milk cheese), or to add a richness and depth to stews and casseroles"

"For me, the perfect Salmorejo or Gazpacho needs a gutsy, peppery oil, and this is the oil I use. I love the way the flavour lingers and then delivers a punch at the end. Organic and unfiltered, I know its slightly unorthodox, but I do like my eggs fried in Nunez de Prado!"
